EVALUATION DU RISQUE DE LIBERATION DE LA VIANDE INFECTEE PAR MYCOBACTERIUM BOVIS DANS LA CHAINE DE CONSOMMATION A SAINT-LOUIS DU SENEGAL
La tuberculose bovine (TB), causée par Mycobacterium bovis, demeure une zoonose prioritaire au Sénégal, représentant un enjeu majeur de santé publique et de sécurité alimentaire. Cette étude a pour objectif d'évaluer le risque de libération de viande infectée dans la chaîne de consommation à partir de l'abattoir de Saint-Louis. Une approche quantitative d'évaluation du risque a été appliquée à l'aide de la méthode de simulation de Monte-Carlo. Les données d'inspection sanitaire ont permis d'estimer la probabilité d'introduction de viande tuberculeuse après le contrôle post-mortem. Les résultats indiquent un risque moyen de libération de viande infectée de 6,67 × 10⁻⁶ [5,09 × 10⁻⁶ -8,57 × 10⁻⁶] avec un intervalle de confiance de 90 %. La quantité moyenne de viande infectée susceptible d'atteindre le consommateur est estimée à 2 207,45 kg par an [2 068,38 -2 346,49], soit environ 6,05 kg par jour. Ce risque persiste en raison de carcasses et d'abats échappant à l'inspection post-mortem, dont le risque moyen est évalué à 4,10 × 10⁻⁶ [3,01 × 10⁻⁶ -5,34 × 10⁻⁶]. Ces résultats mettent en évidence la nécessité de renforcer le dispositif d'inspection sanitaire à l'abattoir de Saint-Louis et de moderniser les outils de détection de la tuberculose bovine afin de réduire le risque de transmission à l'homme et d'améliorer la sécurité sanitaire des viandes.
